How Long to Soak Beans: The Safer Way to Be Wrong

Soak most dried beans for 8 hours or overnight in the refrigerator, or quick-soak them by boiling for 2 to 3 minutes and resting, covered, for 1 hour; soaking is optional for many ordinary beans. NDSU Extension supports all three routes. Dry red kidney beans are the exception: the FDA’s Bad Bug Book says to soak them at least 5 hours, discard that water, and boil them in fresh water for at least 30 minutes.

Choose the mistake you can live with. Skip a soak and dinner may run late. Soak too long in a warm kitchen and you introduce fermentation and food-safety trouble. Treat a kidney bean like a pinto in a slow cooker and the stakes rise from texture to illness.

I spent nine years under a 900-degree chophouse salamander, often plating three hundred steaks on a Saturday. That station cured me of universal cooking times. Beans deserve the same respect.

What does soaking actually do to dried beans?

Soaking hydrates the seed before cooking. Water moves through the coat into the starchy cotyledon. That head start can shorten cooking, help the center soften before the skin splits, and move water-soluble compounds into the soaking liquid.

A 2023 Plant Genome study by Hannah Jeffery and colleagues weighed four common-bean genotypes before and after soaking. Seed weight rose about 50% after 3 hours, more than 80% after 6 hours, and more than 100% after 12 hours. Thus, 100 grams of those dry beans became more than 200 grams after 12 hours. One genotype reached a 129% gain at 18 hours. The measured range will vary by bag.

Water uptake and cooking-time gains flattened at different points for different beans. Some slow-cooking genotypes gained no further advantage after 6 hours; others improved through 12. An eight-hour soak is not mandatory for every dried bean. Soaking is a scheduling and hydration tool, and “detox” promises ask more of it than the evidence supports.

Should you soak overnight, quick-soak, or cook without soaking?

Choose by bean type and by how much delay your meal can absorb. NDSU Extension’s All About Beans gives the ordinary-bean baselines below; its pressure-cooker tests found presoaking unnecessary in most cases.

Water volume keeps expanding beans submerged; bean size and vessel shape still change the requirement.

I advised an automatic eight-hour soak until about 2021. I stopped after cooking fresh black beans side by side, then checking the result against NDSU’s no-soak pressure tests and the genotype data. The overnight batch was easier to schedule; the unsoaked batch was still sound.

The strongest case for soaking is predictability. I grant that fully. Hydrated beans usually finish sooner and more evenly, and draining can remove some raffinose-family carbohydrates. That benefit supports a choice rather than one rule for black, navy, pinto, cranberry and Great Northern beans.

A measured soaking procedure

  1. Sort 1 pound (about 2 cups) of dry beans, remove stones and damaged beans, then rinse under cool water.
  2. Choose the cold, hot or quick method from the table. For a cold soak, add 10 cups water and refrigerate at least 8 hours. For a quick soak, add 6 cups water, boil 2 to 3 minutes, cover and wait 1 hour.
  3. Drain and rinse when the soak ends. Use fresh water for cooking if gas reduction, a clean-tasting broth or kidney-bean safety is the priority.
  4. Simmer ordinary beans gently until several test beans mash creamy throughout. Apply the separate red-kidney-bean rule below.

When does a soaking pot belong in the refrigerator?

Put beans in the refrigerator whenever the soak will exceed 4 hours. NDSU Extension’s pressure-cooking guide gives that cutoff because microbes can grow or produce toxins during a long room-temperature soak. The FDA’s food-storage guidance sets the refrigerator at 40°F (4°C) or below.

Refrigeration buys safe scheduling room. A 20- or 24-hour counter soak buys uncertainty. If the liquid is foamy, sour-smelling or unexpectedly fermented, discard the batch; smell cannot prove food safety.

Why are dry red kidney beans a separate safety case?

Raw and undercooked red kidney beans can contain enough phytohaemagglutinin, a lectin, to cause severe nausea, vomiting and diarrhea. The FDA reports that as few as four or five raw beans can trigger symptoms, often within 1 to 3 hours.

For dry red kidney beans, follow the FDA sequence: soak in water for at least 5 hours, pour that water away, then boil vigorously in fresh water for at least 30 minutes. A slow cooker is not an equivalent heat treatment. The FDA specifically warns that its low cooking temperature may fail to destroy the toxin. Utah State University Extension notes that commercially canned kidney beans have already been processed at high heat and pressure, so they do not require this treatment.

Ordinary dried beans and red kidney beans therefore cannot share one casual instruction. A no-soak pressure method may be reasonable for black or pinto beans. NDSU’s tested high-pressure guidance uses 20 to 30 minutes for black beans and 15 to 20 for pintos, followed by a 20-minute natural release. A low slow cooker offers neither that pressure nor the FDA’s required kidney-bean boil. If kidney beans are going into a slow-cooked chili, complete the 30-minute boil first.

I cannot personally vouch for every heirloom bean or multicooker cycle. I can vouch for treating published food-safety guidance as a minimum, then following the appliance maker’s tested instructions.

Should you drain beans after soaking?

Drain and rinse if your priorities are reducing some gas-forming carbohydrates, getting a cleaner-tasting broth, or handling red kidney beans safely. NDSU recommends discarding the soaking water for its traditional, hot and quick methods. The FDA requires fresh water in its kidney-bean procedure.

Keeping the liquid preserves dissolved flavor, color and some nutrients. A 2018 black-bean study led by Sabrina Feitosa found that discarding soak water caused losses of 6% of iron and 30% of copper in the tested treatments, while phytate fell only 7% in one treatment. Cooking under pressure with the liquid produced the highest in vitro mineral bioaccessibility among the study’s methods. Those laboratory results do not settle every diet question, but they puncture the tidy “discarding equals healthier” claim.

For ordinary black beans destined for a dark, full-bodied soup, I sometimes keep the liquid. For pale beans or a cleaner stock, I drain. With red kidney beans, preference ends. Drain.

Why do soaked beans sometimes stay hard?

Bean age and storage history can outweigh another few hours in water. Buy from a store with turnover and date freezer containers. I would rather replace a stubborn old bag than simmer its edges into paste.

Water hardness is the next measurement. The U.S. Geological Survey classifies 0 to 60 milligrams per liter as CaCO₃ as soft, 61 to 120 as moderately hard, 121 to 180 as hard, and above 180 as very hard. NDSU notes that hard water can delay bean softening. If your utility report says 121 mg/L or more and beans routinely stay firm, run one batch with filtered, distilled or otherwise soft cooking water before blaming the recipe.

Acid belongs late. Tomatoes, vinegar, molasses, wine and citrus can lengthen cooking when added before the beans are tender, according to NDSU. Salt is different. NDSU’s newer pressure-cooker guide allows up to 1 tablespoon salt and 1 to 4 tablespoons oil per pound during soaking or cooking; in its cited tests, that combination kept skins intact and reduced foaming. Season deliberately and account for the salt in the finished dish.

Baking soda can accelerate softening because it makes the water alkaline, but it can also push the texture toward mushy and alter flavor. NDSU warns that it damages thiamine. I reserve it for a tested recipe with a measured dose, never as a standing answer to old beans or very hard water.

I learned the cost of trusting touch when an eight-pound rib roast came out gray to the bone one Christmas. Now I own four thermometers and check them in ice water on the first of every month. For beans, read the utility’s hardness number, note the bag’s age, and taste several rather than finding one lucky soft bean.

How long do soaked beans take to cook?

At a gentle stovetop simmer after soaking, NDSU lists 45 to 60 minutes for cranberry and Great Northern beans, 60 to 90 minutes for black or small red beans, and 90 to 120 minutes for pinto, navy and red kidney beans. These are planning ranges. Old beans and hard water can run longer; vigorous boiling can split skins before the centers turn creamy.

A pressure cooker compresses that range. NDSU lists 15 to 20 minutes at high pressure for pintos, 20 to 30 for black beans, and 25 to 35 for navy beans, then 20 minutes of natural release. Keep the cooker no more than half full with beans, water and other ingredients because beans foam. Follow the model’s minimum-liquid instructions.

A slow cooker stretches the cook and gives less control over the point of tenderness. Use a tested recipe for ordinary beans and expect the appliance, bean age and soak to move the finish. Dry red kidney beans remain the hard boundary: soak, drain and boil them in fresh water for 30 minutes before slow cooking. Convenience cannot substitute for that boil.

Does soaking reduce gas and phytate enough to matter?

Soaking can reduce some raffinose-family oligosaccharides when you discard the water, and NDSU ranks its 4-hour hot soak as the method that reduces gas-producing compounds most consistently. Individual digestion still decides the outcome. In three feeding trials reported by Donna Winham and Andrea Hutchins, fewer than half of participants reported increased flatulence during the first week of eating a half-cup of pinto or baked beans daily; the figure was 19% with black-eyed peas. Some people had no trouble. Others did.

Start with 2 to 4 tablespoons if beans are new to your diet, then increase the serving gradually, as NDSU advises. That may matter more than chasing an exact soak minute.

Phytate claims need even tighter language. Soaking and cooking can change antinutrient levels, but the 2018 Feitosa black-bean experiment found no significant overall change in the principal phytate measured, and discarding water did not improve the beans’ nutritional quality in that laboratory model. Soak for tenderness, time or personal comfort. “Detox” promises outrun the evidence.

Which direction should you be wrong in?

For ordinary beans, accept extra cooking time: skip the soak when your schedule allows a longer simmer, or quick-soak when dinner has a deadline. Choose cold for a long soak. With red kidney beans, choose the FDA’s full 5-hour soak and 30-minute fresh-water boil.

The bean that stays a little firm can cook longer. The kidney bean that never received a proper boil cannot be made safe by optimism.
